Recognised as the queen of blue fish, the coastal sardine, rich in nutrients, oils and energy-giving elements, is tasty, in abundant supply and cheap. The sardine, whose consumption is recommended by doctors, forms part of the Mediterranean diet. It can be grilled, adding a dash of vinegar and a dash of olive oil, but "with a sparing hand", as the writer Josep Pla, an enthusiastic sardine eater, used to say.
